Michel Eugène Chevreul entered at 17 the laboratory of Vauquelin, Museum. He began his investigations on animal fats in 1811. They appear as yet most complete and best executed experiments found all chemistry. For first time, he combined fractional solution, crystallization, distillation, melting point determination, ultimate analysis. All started with isolation an acid solid substance, “margaric acid”, a long list fatty acids isolated from various fats. Studying saponification, determined that “anhydrous glycerine” was combining water. After studying human gallstones, discovered “cholesterine” (cholesterol). From whale spermaceti, described “cetin” (mainly cetyl palmitate), containing no glycerol. sheep fat new named “stearic acid”. This component proposed joint patent by Gay-Lussac (1825) for fabrication very efficient candles. several volatile cow goat butter (from C4 to C10). His master work ( Recherches chimiques sur les corps gras d’origine animale, 1823b ) contains experimental procedures theoretical conclusions nature fats, it may be considered treatise lipochemistry.
